The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

No coz, jednak za pieknie sie nie starzeje to piwo, owocowe, sliwki daktyle, figi, rodzynki jumbo i karmel tak jak wersja magnum nie widze specjalnych roznic. 21/XII/24 - 1.5L bottle from Geers (Oostakker), shared @ Timtage Rochefort Tasting with foodpairing, BB: n/a (2024-xxx)
Food pairing: deer paté with armagnac, ginger bread with dried figs, caramel mustard seeds, Belgian endives and kriek confit, prepared by yours truly.
Clear reddish brown beer, practically no head. Aroma: oxidized, honey, malty, earthy, nice, good smell! MF: ok carbon, medium body. Taste: soft roast, lots of dried fruits, malty, some chocolate, a little bit of cardboard, a bit oxidized, dry, dates, lovely! Aftertaste: bitter, a bit hoppy even (?), malty, good roast, dry finish.
