The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

21/XII/24 - 1.5L bottle from Geers (Oostakker), shared @ Timtage Rochefort Tasting with foodpairing, BB: n/a (2024-xxx)

Food pairing: corn tacos, pulled boar stewed in quadruppel, blue red cabbage salad, chipotle and lime mayo, all prepared by yours truly.

Alas this bottle had a wet cork under the crown cap...
A little cloudy dark brown beer, small creamy beige head, unstable, non adhesive. Aroma: nice, a bit earthy, soft roast, a bit oxidized, cardboard, dried fruits, dusty, spicy, coriander. MF: ok carbon, medium body. Taste: a little sweet, earthy, some caramel, dried fruits, oxidized, orange peel, spicy touch. Aftertaste: spicy, oxidized, earthy, good stuff, a bit dry, some almonds, honey. Not the best, but still fairly decent.
