We joined forces with our friends at Sante Adairius Rustic Ales to create this one-of-a-kind wild ale. Aged in French oak barrels and co-fermented with Hollister apricots and Santa Ynez Valley white wine grapes, Big Mood will hypnotize you into thinking you’re drinking an apricot mimosa. Flamboyant apricot aromas with a sense of perfumed tropical fruit and elegant vinous maturity.

85% French Oak, 15% American Oak; 18-36 months in barrel.

Bottled. Golden colour with a small white head. Aroma is funk, some grapes apricot sweetness and mild acidity as well. Flavour is tart apricot, some grapes, funk, yeast and mild sour wooden tones and light acidity. Dry and sour, very nicely dry palated sour beer..

On tap @Bottlecraft Little Italy. Goblet thingie. Clear, oily, dark gold. Apricots, honey, ice wine, lime, browned apples. Soft & manageable tart. Apricot & sweet, boisterous white wine grapes. Lime acidity & pith, soft but lingering wine skin tannins. Low acid. Kinda great.

At Snallygaster. Poured a clear golden yellow color with a small white head. Aroma was pleasant fruity notes, apricot? Some funky yeast. Really pleasant tartness. Really nice stuff.

Sampled from the tap at Aces and Ales Tenaya. Pours a clear light yellow with a white head that dissipates slowly to the edges. Aroma dry white wine note with some apricot and melon notes coming through. Flavor has dry white wine throughout with a bit of melon and a tart apricot bite.

Super nice beer. Definitely has a big Sante Adairius infusion here. Apricots are super huge and nicely integrated. Golden pour with decent head. Citrus, well integrated barrel. Great balance. Tap at Snally.

On tap at Firestone Walker - Buellton, pours a clear golden with a small white head. Aroma is gentle, with lots of wild yeast, musty white grapes, and a touch of tart apricots. Flavour reveals bright, tart apricots, moderate acidity, oak, and lots of wild bugs. Vinous, wild, and tart, with appropriate acidity. Excellent.

375 c&c from the brewery. Pours gold with a foamy white held that collapsed quickly. Aroma is clean apricot and wood. Med body. Flavor is apricot, wood (maybe a hint of musty?), something that may be white berry. It is ever so mildly tart/sour. Amazingly clean. Very refreshing.
