This beer was brewed using a variety of malted barley and raw wheat. One variety of hop was added to the kettle during the boil. The wort was transferred to our sour cellar to cool in the coolship overnight to be fermented with wild yeasts and bacteria. The liquid was then aged in puncheons (wooden casks) for 12 months. This is the traditional Lambic method with minimal intervention that perfectly encapsulates the micro forna and flora of the Ellon countryside.

Bottle picked up at Dogtap. It pours ever so slightly hazy orangey - golden with a thick, fluffy white head. The aroma is sweet - sour, tangy, chalky minerality, parma violets, refreshers, funky, must, funk, barnyard, hay, light manure, floral accents and zingy lemon. The taste is crisp, dry, sour, bracing acidity, minerality, lemon rind, sherbet fizz, zingy, refreshers, floral, wet grass, deep funk, hay, fizzy cola bottles, vinous and white wine with a dry finish. Medium body and moderate, foamy carbonation. Bright and snappy. A touch too much acidity for it to be top tier, but nice anyhow. Grew on me.

Bottle split at the Tickombe 30K last tasting before lockdown 2, thanks to Fergus, 01/11/20. Light hazed orange to light copper with a fast collapsing off white cap that thins to spotting. Nose is dry rot, funk, cats pee, papaya, stoned fruits, hay bale. Taste comprises damp alleyway, funk, sharp citric zest, stoned fruits, vinous. Medium bodied, fine carbonation, big drying close with a balanced acidic edge. Solid lambic.

Bottle shared at Colin's pre lockdown 30k tasting. A light hazed golden coloured pour with a fine white head. Aroma is nice horsey funk, onion, nice funk, chive, grape. Flavour is composed of shape lemon rind, farmyard funk, brett, lime juice, light onion. Palate is sharp, tangy, mild pucker, highish carbonation.. Good.
