This beer was brewed using a variety of malted barley and raw wheat. One variety of hop was added to the kettle during the boil. The wort was transferred to our sour cellar to cool in the coolship overnight to be fermented with wild yeasts and bacteria. The liquid was then aged in puncheons (wooden casks) for 12 months. This is the traditional Lambic method with minimal intervention that perfectly encapsulates the micro forna and flora of the Ellon countryside.

Well stored bottle. Unclear golden body under a big off-white head that fades fast to nothing. Nice aroma, funky, fruity and oak. Taste has a nice, crisp sourness, fruity, lemon, oak, Brett and some peach, fresh with lively carbonation. Balanced body with a long lasting, tart aftertaste. A really nice classic lambic style beer.

Appearance: Light orange golden, some haze. Small, fizzy head. Aroma: Tart fruits, lemons. Taste: Light fruits, lemons. Sour, then sour aftertaste. Barn. Slight saltiness? Not my thing. Bought: amstein.ch, 375 ml, CHF 7.00 Info: 4/12-2021, BB: 30/6-2025

Bottle @ Bønnerup Strand. Pours slightly hazy golden with a small white head. Aroma of malt, light sourness, yeast, barnyard, dusty, leather, green grapes, citrus, lemon, peel. Flavor is rarther sour, light bitter, malt, barnyard, dry woody, tart fruit, dry citrus, lemon, acidic. Medium body, average carbonation, dry and acidic finish. 161021

375ml bottle @ Free-Dumb tasting, Chez Sophie July 21. A good start to a particularly sour-heavy night. Apologies to Jeremy, though he soldiered through admirably. Super crisp, wild, funky fruity floral. Confidently acidic, bright and cutting through the heat nicely. Really good.

19th July 2021; Shrewsbury Beer Share in Chez Sophie, five of us splitting 16 different beers, t'was a good night! 1st beer of the evening, cheers Simon for the 37.5cl bottle of this (7% ABV); BB 30th Jun 2025. Hazy, dull golden body no head worthy of the name. Sour cooking apples came to mind as I sniffed and sipped this acidic brew.

A bottle from Goblet Beer Store, Zagreb. Shared with Ogi and Marko with 9rand ta2sting 2021. Thanks Ogi. Hazy orange, minimal off-white head. Funky apricot and orange, rose petals and floral aroma, traces of zest. Light to moderate sourness, lemony, sour orange. Light body, soft to moderate carbonation, moderate finish. Nice soft gentle wild ale.

Bottled 375ml. -from Goblet Zagreb, shared with Marko & hrabren. Unclear orange coloured, small white head, white wine in the nose. Yeasty, fruity, spicy, tart white wine and light citrusy with dry finish and high carbonation.

Bottled, thanks Ogi for sharing this with us. Murky dark amber-orange body, off white head, tiny. Big tart white wine aroma, citric slightly, a bit raisiny, funky, herbal, dry, interesting. Lean taste, salty and sour, lightly citric, vague leathery, simple but not bad at all really. Good stuff.

Bottle sample at a tasting at Yoav's place. Cloudy golden. Barnyard, oak, some cobwebs, fruitiness, citric, sour, juicy, medium-bodied. Great.
