Anyone that has been to our brewery know we have some fishy neighbours. So considering one of Victorias main oyster suppliers Tim and Terrys is opposite us we thought it would make sense to collaborate.
After foraging for some local saltbush and seawater. They were added to the boil with a generous number of oyster shells.
8 different malts were used to create a complex, dry, smooth stout.
Hops (courtesy of YCH) - Willamette, Anathum and Loral were added to the whirlpool to create structure and depth.
Dark, dry, slightly salty and complex. Showing off English stout characters- rich dark chocolate and coffee.

Can. Black with a tan head that settles to a cm. Aroma of singed sugars, roasted malt, chocolate, the sea. And so it tastes. Full bodied with lowish carbonation. Enveloping. Deep dark malty flavours but dryish with a mineral edge before firm bitterness. Perhaps a bit of licorice. Real presence and depth for its strength. Maybe the salt makes it a bit wearing after a while. Good stuff.
