Time allows us to appreciate the passage of time.
A two-year-old spontaneous beer refermented on raspberries, blended with a three-year-old Bière Brut refermented on sour cherries and raspberries.
The result is rich and jammy, with a bright acidity and dry finish.
Best paired with forgiving yourself for mistakes you no longer make.

Bottle shared at MONYO, courtesy of Gabi. Pours opaque gold with a reddish hue. Nose is big raspberries and sour cherries, some lactic and acetic acid, light funk. Taste is tart fruits upfront, raspberries and sour cherries are both there, then it's mainly about the lactic- and acedic acids with a light woody hint just to give it depth and some brett to put the funk in. Closes with a sour finish, has a ligt body and average to lively carbonation. Lovely.

A magnum to start with, in this sunny day. Pretty heavy sour, slight pucker, but with a lot of raspberries to compensate. Well carbed without being too much, jammy like fruityness, some wood and a light funk. Refreshing and flavourfull.

Aroma is prickly sour, light vinegar, sour woody raspberry, woody pips, yogurt funk. red grape. Super prickly. Flavour is composed of super sour, prickly raspberry, cherry pips, verging on vinegar, woodland berries, mid pucker. Palate is prickly, mid pucker, frothy carbonation. Nice stuff.

Panda at home, thanks to the Wingmane, 23/01/21. Light reddish amber with a moderate crimson cap. Nose is tarte cherry skins, jammy berry, vinous tones, light acidic nostril tickle, funk. Taste comprises sharp berries, acidic bite, funk, damp hay, vinous trace, red berry compote, earthy berry fruits. Medium bodied, fine carbonation, semi drying close with a medium acidic throat scrape. Solid sour ... good level of complexity for the ABV and delivers a balanced acidic rise.

Bottle at home from CW online. Pours reddish brown with a decent haze. Aroma is jammy red fruits, grape, lots of wine notes, some funk. Taste is a big funky sour hit, lots of sharp jammy red fruits, the grape, wine and oak mellow out the sourness but still leave a sharp long dry finish. Decent stuff
