Raspe is a blend of blond Missouri Wild Ales that were fermented entirely with our Missouri cultures and aged in French oak until maturity. At maturity, a blend was chosen and then moved on top of more than 4,000 lbs. of Decker Farms Oregon Red Raspberries in one of our American Oak Foedres from our friends at Foeder Crafters of America. The result is a lively, jammy, vibrant beer that showcases the quality of the fruit that was selected and the maturation time of the whole process to produce Raspe. For reference, we used as much Red Raspberries in Raspe as we used Black Raspberries in Fencerow!

Like the La Fosse I just had, this smells wonderfully fragrant of rich, full, bright, authentic raspberry (just as the apricot was excellent in the La Fosse). But, just like La Fosse, it doesn't have a huge amount of depth to it, with low brett, low barrel. Just a rather one-trick pony. Lots of lactic acidity portends heavy sourness to come.
Hmmm, yes, indeed sour. Maybe not quite as sour as the 2022 La Fosse I had yesterday, but at nearly 5.5 years old, this is still VERY sour. Oak tannin, juicy raspberry and still quite an ample texture (also just like the La Fosse). Maybe a bit more barrel, vanilla, very light Brett here, but it's still mostly raspberry and very sour lactic acidity.
