今回のテーマは旨味＋IPA。和風出汁からインスピレーションを受け、旨味のある和の素材にこだわった。初めてなのにどこか懐かしい味わいのユニークなIPA。

【味わいの特徴】
旨味成分でモルトの甘みが強調され、フレーバーは残らずともビールに奥行きが与えられました。土っぽい爽やかな香りが特徴のホップが、初めて採用したイギリスのエール酵母とうまくまとまり、口当たりもまろやかで心地よい味わいです。

鴨肉、きのこ料理、リッチなチーズ、焼き魚（特にサンマやサバが合いそう）
【醸造家の声】
旨ではその名前の通り、味覚のひとつ「旨味」をIPAで探求・表現しました。旨味の元としてシジミと昆布を使ったことで、それらの素材が本来持つ味ではなく、ビールの味わいに深みと豊かさが生まれました。また、初めてつかうイギリスのエール酵母は旨味の要素とが上手に働きあい、麦芽と酵母の個性をアクセントとして引き立て、このビールを一段と印象づけています。旨はさまざまな味・食材と合わせながらペアリングを存分に楽しめるビールといえるのではないでしょうか。

The theme this time is IPA + 'umami'. In order to impart its savouriness character, we used ingredients often used to make dashi (stock) that is prevalently found in Japanese cuisine. Although uncommon for beer ingredients, the underlying taste is somewhat nostalgic and makes for a unique IPA.

[Character]
The 'umami' components of the beer accentuates the sweetness of the malt without leaving behind an unexpected aftertaste. This is then backed up with fresh, earthy-aroma hops. Lastly, English ale yeast helps blend all the individual components together to create something that is well-rounded on the palate and a pleasure to drink.

[Brewer's Voice]
This beer explores the taste sense umami in the IPA style. While we used shijimi and konbu to contribute umami, the flavor is not affected. Instead, they combine to give the beer a richer and deeper character. This beer is also our first ever English IPA, allowing the umami character to accent the malt and yeast flavors that the style is known for.
