The matter in this bottle was created in the Big Bang at the dawn of time. Time carried it through at least two supernovas to our solar system, bringing some of it to the flower gardens of Vancouver, where bees collected it in the form of nectar and carried it to their hives. The bees made it into honey, which was then gathered by a human named Garrett.

The honey was added to a beer and fermented with a mixed culture of brewer’s yeast, brettanomyces and bacteria, carefully selected by a human named Ryan. It was then aged for 18 months — the blink of an eye on the time scale of the existence of matter, but many times the lifespan of a honeybee.

We put it in bottles, refermented it and aged it for several more months. We now believe it to be a thing of subtle and intricate beauty, as it will remain for a number of years.

But eventually it will resume time’s journey.

Cloudy pale gold with a decent white head. Sweet and some stone fruit notes. Slight sour stone fruit, light sweetness and a light sour note. A bit buttery throughout the nose and taste, but not offensively so.

Cloudy medium gold body and weak foam. Really good sour yeast character, grain funk, acidic notes. Taste is a nice citrus grain funk, soft wood barrel notes. Ends puckery lemon zest with just a little wet which is okay. Otherwise a nice hit of rustic beer here.

Draught at the brewery
Cloudy blond colour. Fruity and Bretty, lightly vinous, with mild floral accents, a robust acidity that blends well with some residual sweetness, and the wood character that shines in the finish, light astringency and a touch of alcohol Aggressive, bold. Excellent.

750ml @ home celebrating a possibility of using those f@cking 3 letters after 6 years of pain! Appearance: hazy golden with a white head. Aroma: nice and balanced Brett with wine barrel notes. Taste: along the same lines, lots of fruity and winey notes, maybe some yogurty character, noticeable barrel notes. Overall: very nice!

Pale, hazy, this has a lot of brett on the nose, soft pale malt. Nice bit of brett and wood that really pops. Floral, tasty.

750mL bottle, pours a clear golden blonde with a small white head. Aroma is full of mixed bugs, rustic saison yeast, and fermented out honey. Flavour is very buggy, with lots of wild yeast, rustic saison yeast, and an oakiness. Wild, rustic and gently tart with good complexity. Excellent.

Poured from the tap. Fairly hazy gold with small white head. Lots of brett, saison yeast, medium tartness. Quite good.
