Bottle @ Koelschip. Pours deep dark red with a small pink head. Aromas of raspberry jam, light vinegar, oak, sweet apples, vanilla, stable notes. Taste is sweet, jammy, oaky, citrussy, light grain, hay, vinegar, apples.

From bottle at Cantillon. Big thanks to whoever brought those Bokkereyder bottles!! Light unclear dark ruby red color with pink head. Yeasty and light malty aroma, sweet and tart raspberries, funky barnyard, wood, some sweet fruity notes maybe from cognac. Sweet and acidic taste like aroma. Medium oily body with soft carbonation.

(Bottle pour @ MBCC 2017 Blue Session, Copenhagen) Pours a lightly hazy deep red with a pale pink head and lace. Notes of juicy fresh raspberries, light jam sweetness, very soft sweet grape notes on the tongue, a touch floral, smooth leathery oak, lightly funky, rather tart to light sour overall, a touch lactic plus lots of berry. Fairly dry finish has berry seeds and soft tannins along with lots of lingering fruit. Medium bodied, fairly soft carbonation. Beautiful stuff, probably the most subtle of the 3 Framboos variants at the festival but that's exalted company.

750mL bottle, drunk at the Grana Padano Share 2, 6/10/17.
Blood red appearance, great clarity and a beige/enamel head that is heavily pink-tinted, of course.
Bright, but deep, sumptuous, well-expressed fruit in the nose, as Bokkereyder seems to always provide. Kind of reminds of De Garde, in that regard. Hint of vanilla, if looked for, providing dry spice that is easily lost in the sea of raspberry seed and rich, tart juice. Lambic character is still obscured somewhat by the fruit, but it’s no doubt full of soft, playful, fruity Brett and moderate lactic acid. Low on the oak (no toast, of course, given the barrels used). I don’t find the cognac in the nose, and that’s completely fine. I’m sure it’s at work and it’s probably all the better that it’s not jumping out at you. No alcohol or flaw.
Dry in the mouth and quite tannic from both wood and berry seed/skin. Again, the lambic character is more relaxed and the sourness, or intense tartness stems much more from the fruit acid than it does the bacteria/yeast. And that’s fine; what’s there is fruity, lively and moderately funky and will no doubt develop nicely as the fruit softens and fades. Again, cognac is done very tastefully here and I really only get light wood and a touch of spicy alcohol character from it. For how boisterous the fruit is in the nose, it’s incredibly surprising how dry, tasteful and light this is, all around. Tight carbonation and a mostly soft texture, though a bit thin at points, with quite a bit of wood tannin.

Bottle shared at Akkurat. Clear ruby color with pinkish head. Aroma is intense natural raspberries, more raspberry than raspberry, with a distinct old lady perfume / rose petals character. Taste is lots of raspberries again, rose petals, not so much cognac. Solidly sour finish, just a bit puckering. Medium carbonation. Great, but a bit too perfumed for me.

[5/10/17] Bottle at Koelschip in Copenhagen. Beautiful deep red with a pink head. Incredible huge aroma of raspberries, juicy, jammy, barnyard, oak, lemony notes, a bit of vinous notes. Sour flavor with a light sweetish note, dry finish. Rounded, smooth, silky, delicate. Incredible. Wow.
