Our stock ale is brewed and aged in the tradition of the great English and American barleywines brewed with floor-malted Maris Otter, Munich, and a blend of Crystal malts, and hopped with Amarillo and Centennial. Deadfall was fermented with our house ale strain and then aged for six months in a Westland whiskey barrel which had previously held American bourbon. The barrel character is more akin to scotch than American whiskey, and the extended aging has enhanced the malt, hop, and yeast characters without overwhelming them. The fruity yeast and hops meld with the sweet malt character and notes of vanilla spice, and citrus of the cask, creating a complex array of caramel and bruleed sugar flavors, with an aroma of candied oranges.

Draught@TCBW2022. More or less black colour with a small off-white head. Aroma is caramel, some smoked tones with a bit fudge, floral and fruity tones with some vanilla and wood to it too. Flavou ris sweet caramel, fruity, dried fruity and wooden tones with some vanilla and mild alcohol sweetness. Warming. Pleasant to sip.

Pours dark, unclear brown. No head. Scent is typical Old Ale. Caramelly, nutty. Medium intense. Taste is full, sweet, nutty and caramel. Mild bitterness. Touch boozy. OK

ABV: 9.0%. Clear medium to dark brown red colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, caramel, dark malt, dried fruit, barrel, vanilla. Flavor is moderate to heavy sweet and light bitter with a long duration, caramel, sweet malt, dark malt, dried fruit, malty, bread, light barrel - vanilla. Body is medium to full, texture is oily, carbonation is soft, finish feel is warming and light alcoholic. [20201024]
