Pours very dark brown with a huge tanned head of medium good stability. Scent is quite ashy, lactose, almost a bit metallic, BE (bit stressed) yeast profile. Remembering one of my homebrews trough this ;) Taste is roasty, bit ashy, very carbonated, dominant yeast slickness, esters, bit stress, making it fairly oily-chewy coffee-with-milk like. Overcarbonated and not really my thing at all. I had this happening to one of my homebrews as well - even though Totem are much better brewers than I'll ever be, but this one doesn't really cut it for me. Truth be told, it's a few years past it's BBD, and it shows little to no negative age factors, its just the overcarbonation and yeast vs roast balance that does it for me.

330ml bottle. Jet black colour with average to huge, thick, frothy, slowly osteoporosing, minimally lacing, beige head. Vinous, fruity, yeasty and chocolately, dark malty aroma, notes of dark chocolate, milk chocolate, blue grapes, blueberry, blackberry, cherry, a touch of plum, plum butter, a spicy touch of nutmeg and cinnamon. Taste is slightly dry, vinous, fruity and sweet-ish, chocolately dark malty, slightly yeasty spicy, notes of dark chocolate, milk chocolate, blue grapes, blueberry, blackberry, cherry, a touch of morello, hints of cinnamon and nutmeg, dry overtones of fruit parings; minimally overcarbonated. Rich and complex, highly drinkable at the same time. Very, very nice.

Leicht säuerlicher, insgesamt rund malziger Antrunk. Wenig würzig, harmonisch. Gut. 8/9/9/9//9

Black and creamy. Very sweet and rich. Has caramel and some warming cognac notes. Pleasantly sweet.

Bottle from Geers. Dark brown/black colour, beige foam. Bitter roastiness, coffee, some notes of caramel and honey. Medium body, well balanced. Nice beer.

33 cl bottle. Pours hazy yellow with a small white head. Aroma is peachy and citrusy. Smooth fruity, crisp hoppy. Peachy and smooth fruity. Mellow and crisp hoppy finish.

Fast schwarze Farbe, geringe beige Schaumkrone. Geruch süß röstmalzig, Karamell, Vanille, Schokolade. Geschmack süß malzig, Karamell schokoladig, Vanille.

08/04/2016 @home - 33cl bottle from Bierhalle Deconinck, Vichte. Dark brown with nice tanned head which is quickly gone. Nose is coffee, dark chocolate, some licorice. Taste has first bitterness from coffee and dark chocolate, than some sweetness and some dulche de leche flavours making it really smooth. Nice mouthfeel. Verry nice brew again from Totem.

Bouteille 33cl, BB 12.2018. Brune foncée, col fin crémeux café au lait. Arôme offre un bouquet malté avec un rétro persistant de levure belge qui aurait pu être substituée pour une US. Rétro léger de fruits noirs rappelant la cerise noire voire de pruneaux. Je note aussi une fine effluve de réglisse, mais trop peu en terme de lactose ce qui semble toujours un exercice de balance pour ne pas tomber dans le surfait. Palais reste centré sur un malté avec des notes de réglisse. Le tout est terreux et sec, grains concassés. Lactose est, ici aussi, assez modéré n’apportant pas trop au deScriptif initial de la bière. L’amertume émanant d es houblons reste dans une optique noble avec un rappel de Nugget. Je trouve un côté rond sur la fin du malt Vienna mais également de l’avoine qui apporte sa contribution au niveau de la bouche. En cherchant un peu plus, je trouve ci et là des signes de fumé assez discret. En l’état, le Dulce reste minimaliste et je pense que la base levure ne joue pas en la faveur d’un style qui se veut clairement plus américain.
