At the heart of each Bourbon County are the wood characteristics we thoughtfully amplify. This year, we took wood complexities to another level by doing something we’ve never done before: we took fully-matured Bourbon County Stout and finished it with toasted fruitwood—specifically, honeycomb-shaped cherry wood chips. The versatility of the cherry wood and honeycomb shape allowed for maximum flavor extraction, revealing complex characteristics like red fruit, ripe cherry, and light toffee, which are not found in the original oak barrel itself. The result is an amazing elevation and a notable difference from our Original Bourbon County Stout.

Black colour, no head; the carbonation is mostly gone now. Mild aroma of chocolate and coffee, some red jam. It's bold and moderately thick; I had richer and more elegant BCBS in the past; chocolate, a bit dusty, cacao; then mild touch of leather and tobacco; prune jam; and a healthy dose of alcohol. Very good, not exceptional.

Poured from 500mL bottle (2021 vintage). Very dark brown with small beige head. Soft cherry wood quality underlay, mild roast malt, mellow chocolate in the background. Nice gentle sipper, nothing over the top about this, with a good balance.

Dark brown. Sort of a fizzy head. The aroma has a lot of bourbon up front, light toasty notes, and a little bit of roast. On the palate, it has less carbonation than I expected, and a medium body for the style. Feels relatively soft, sweet and heavy for a Bourbon County. Good hit of alcohol up front, then mellow dark sugars and some toastiness. A bit of tannins help to round things out.

Bottle at SP Invitational. Pours a dark brown with small tan head that lasts. The aroma is roasted malt, toffee, wood, bourbon. Slick, woody, roast, toffee, boozy, very nice.

Bottle. Poured a dark brown, black color with a very small, tan head. Chocolate, bourbon cherries. Vanilla, roasted malts, chocolate. Bourbon. Slightly mellowed out. Roast. Alcohol really well masked to be honest. Tasty stuff.

50 Cl. Bottle @ Whale Slaying With Ratebeer Odense, 2nd January Tasting, 2024. Pours Black with a small beige head. Bastogne crackers, roast, Wood, bourbon and a touch of soy. Super smooth, slick and full bodied. Dry roasted finish.
