This batch of keeved cider was spotted as being something different way back in the winter of 2020. With complex fruit and delicate balance it stood out as being worth particular attention to become a special product. It was first left to ferment with a succession of wild yeasts in tank for six months, then transferred to delicately smoked second-use whisky barrels for the same amount of time.
A briny sea blast through the smouldering embers of an orchard peat fire. Confident rounded tannins, soft delicate fruity sweetness and mature acidity on the finish.

Sample, thanks Ed for this one. Drunk whilst thinking about riding my bike in North Wales tomorrow. Clear gold appearance, toffee apple nose. Taste is all about the keeved cider on the front of the palate, smooth, harmonious blend, nice fleshy fruit, with a subtle misty smokiness coming through on the finish. Islay influence is thankfully mild, but welcome. Interesting, captivating even.

750ml bottle from Fine Cider Co. Hazy orangey gold colour, short-lived white foam head and aroma of fruity apple, whiskey barrel hints. Taste is sweetish, fruity, apple, fleshy, with some islay cask notes, peaty, phenolic, salty & woody, tannic. Medium bodied, light carbonation, medium dry finish with whiskey barrel notes. Very drinkable.
