This beer has nice fruity and spicy notes from the Belgian yeast used in fermentation. The chocolate and raisin flavors are well-balanced with a lingering dry finish. Excellent on a cold winter night and paired with heartier dishes like stews and roasts. Also excellent with chocolate desserts.

375ml bottle from City Beer Store, San Francisco

Batch 011 - Pours dark brown with a foamy white head. Aroma of ripe fruits, syrup, toasted malts and chocolate. Taste is sweetish with some dark ripe fruits, spices, yeast and syrupy notes. Finish is sweet and malty with hints of chocolate and ripe fruits. Okay, quite balanced dark Belgian ale, but a bit too sweet for my taste.

Bottle from Whole Foods Soma. Nose of chocolate/cocoa, wood, umami, peach. Deep amber color going to orange. Flavor is cocoa, light tartness, chocolate, cherry, ginger ale. Light body. Pretty drinkable, tasty, and elegant. Ethereal body. Bitter finish. Very nice, and quite different from the usual in this style.

375 ml corked and caged bottle. Bottled on 4/18/12. I poured this into a Chimay glass out of respect. Garnet colored liquid topped by a creamy tan head about one finger high. Yeasty, bready, earthy, dried fruit malt aroma redolant of dried figs, vanilla bean, cocoa nibs and fresh baked bran muffins. First sip yields a silky toasted malt flavor reminiscent of currants, pecans and toasted oats. Right away you know this is a special brew. One that should be savored, like a fine sherry or rare cognac. A second sip reveals more complex notes of dark brown sugar, cardamom and exotic fruits. The finish is subtle with toasty malt and herbal hops. Make no mistake, this is world class Belgian style character coming from the West Coast. A must for those who appreciate world-class ales. Go out and get this one boys, it’s worth the coin!

Aroma is sweetish with ripe fruits and candi sugar. Also some distant earthy notes. Flavour is sweet and slightly sour with brown sugar, ripe fruits, raisins and some orange peel. Foamy, creamy and rather smooth palate. Sweet but well balanced.
