St Phoebe 2020 was made in a similar manner to St Abigail and St Thomas whereby we source and macerate whole, real fruit from Nashdale with barrel ripened Gold from our cellar. This year, the beer had a whole four months to hang out with these plums and soak up every last bit of their sweet plummy goodness before being blended and bottled in early July 2020. For 17 weeks the beer went through its ultimate fermentation in bottle for carbonation and conditioned concurrently. At this month of release, it is 5.6% ABV and super tasty. Strong skinsy pinot gris pet nat vibes. Lifted nose, perfumed (rose water) and full of ripe sweet fruit. Surprisingly funky and with a dark spice complexity. The palate shines, beautiful, subtly pretty integration with the fruit, creamy carbonation, sweet purple fruits and a moreish gentle acidity to finish.

Sample courtesy of Grumbo, cheers! Aroma is red grapes, plums, sugar, hint of funk and citrus. Wonderful taste sour plums and red grapes. Full bodied flavour. Slightly dry finish. A brilliant sour.

Bottle, 375 ml. Courtesy of kajser27, shared with him and Miro B. Cloudy red with small white head. Fruity, medium sourness, plums, sweetish, nice fruitness. Juicy. Medium bodied. Somewhat puckering.

375ml bottle - Pours a cloudy peachy orange colour with a small white head. The aroma is tart plums, grape skins, leather and light funk. A light sweet and moderately tart fruity taste, tart plum, yoghurt, oak and vinous notes with a light dry and tart finish.

37,5cl Bottle. Thanks to Sir Alex. Split during Denmark-Scotland. Pours hazy dark golden with a small head. Funk and wood. Plum, grapes and brett. Quite tart and dry finish. Nice.

28/7/2021. Bottle sample courtesy of danlo, cheers Ed! Pours cloudy dark orange gold with minimal head. Aroma is funky, tart plum, soaked raisin, flowers, wood, leather, grape, hint of butterscotch. Moderate sweetness and medium tart. Medium body, average carbonation. Sharp, tangy, tart finish. Mouthwatering stuff. Very good.

375ml bottle, online from Rad Beer. Pours opaque milky pinky red with a slim whjite head. Aroma, sour, fruity tart plums. Taste: light to moderate sour, fruit, light plum, oak, with a yoghurty sherbety vibe. Medium bodied with light carbonation. Very nice if a bit subtle on the plums.

375ml bottle from Hop Knocker, Durham, UK. Murky reddish orangey gold colour, white foam head leaving lacing and aroma of plums, fruity, sour citric. Taste is sour, citric rind, fleshy plum, fruits, wood barrel, some grain, along with lactic & salty hints. Slick mouthfeel, medium bodied, soft carbonation, sour finish. Very well balanced and very drinkable.
