Based on a parsons traditional recipe, the Mead is made by fermenting honey from bees who feed on heathland heather in the UK, some of which comes from the Suffolk coastal region.

This light, sweet wine can be drunk in a variety of ways; as an aperitif, straight, as a dessert wine or after a meal with a fine piece of Suffolk Gold Cheese.

Equally good served mulled with spices.

31/8/2024. Bottle bought direct from the winery. Pours clear golden with minimal head. Aroma is rich, honey, floral, heather, beeswax. Good sweetness with light tanginess. Medium body, smooth, low carbonation. Enjoyed this.

Panda at home, thanks to SHIG, 21/09/21. Pale washed out blonde with some bubbles that cling to the edge. Nose is honey, sugars, floral, light herb. Taste comprises sugars, honeycomb, floral, light herb, Full bodied, oily complexion, semi drying close with a rising kiss of alcohol. Decent enough mead ... not super sweet either.

Panda 🐼 at home thanks to SHIG. A Clear pale petrol coloured pour with no head. Aroma is semi sweet, earthy honey, white chocolate, some white raisin. Flavour is composed of medium sweet, honey, melon, white raisin, white grape. Warming alcohol but it hides it well. Palate is medium sweet, smooth, oily, slick. Good.

Bottle thanks to Grumbo: Poured a golden with bubbles. Aroma is floral, honey, sweet, some earth. Taste is sweet honey, that floral heather is present, sticks to the palate.

500ml bottle courtesy of Grumbo, cheers Graham! Pale yellow gold colour, afew short-lived bubbles on top and aroma of honey, floral. Taste is sweet, honey, herbal, spicy, mellow. Syrupy mouthfeel, medium bodied, low carbonation, floral herbal boozy finish. Nicely sippable.
