Winemaker Tim Phillips makes tiny-batch wines and ciders on his delightful property near Lymington in Hampshire. He has numerous ancient apple trees both within and around his Victorian walled garden, from which this dry cider has been made. Based on an almost forgotten northern Italian tradition of "vin ed pom", this has an addition of red wine (95% apples, 5% wine). The earthiness of the red apple shines through, with hints of red berry and sourdough.

Sample courtesy of Grumbo, cheers GB. Aroma of grapes and red apple. Follows through on the taste. Finish is bitter and slightly drier than expected. Good.

Bottle pour at The Cider House, pours a hazy pink, no head. Nose is full of champagne-like must and moderate farmhouse notes. Flavour is gently tart, with dry champagne, crisp apple skins, and some light funk. Complex and well-made. Excellent.

Sample thanks for Danlo: Poured a orange with reddish pink hues in the edges, head is frothy white. Aroma is pungent apples, ripe, earthy, woodsy. Taste is apple, woodsy, grapes, tannins, vinous.

7/5/2021. Bottle sample courtesy of danlo, cheers Ed! Pours clear dark pink bronze with a small bubbly white head. Aroma is rich apple, red grape, red wine tannins, yeast, light wood. Light sweetness and medium bitterness/tartness. Moderate body, average carbonation. Enjoyable.

750ml bottle from O'Briens online. Reddish amber gold colour, white foam head that retains and aroma of red wine, apple, wood barrel, oaky. Taste is tart, tangy, apple, wood barrel, oak and vanilla, with grapey, red wine notes and some tannin. Medium bodied, soft carbonation, dry tart oaky mellow tannic finish. Quite drinkable.

Bottle ordered from a natural wine shop in Hackney that also stocks a few ciders and beers. Aroma has apple peel and an earthiness with vinous hints. Copper gold with a ruby tint. Foamy translucent white head. Medium-heavy sour. Tart apple and grapes. Some sweetness. Light bodied. Thin. Fizzy carbonation. Dry. Some astringency. It's enjoyable enough. Brut dryness but otherwise a tad bland.
