A still cider, made from 100% Gilly bittersharp apples - a hybrid apple created at the Long Ashton Research Station in the 1990s.
We have collaborated with The Ciderologist and Circumstance Distillery, maturing our Gilly cider for 9 months in Circumstance's 30L Chestnut Barrel, previously used to age their first release of Circumstantial Wheat 1:3:1:4:5

19/4/2021. Bottle sample courtesy of danlo, cheers Ed! Pours clear golden with a small bubbly white head. Aroma is vaguely funky, musty apple, wood barrel, light chestnut, touch of vanilla and caramel. Moderate sweetness and slight bitter/tartness. Moderate body, low carbonation. Drying finish. Picks up the barrel quite nicely.

Sample thanks to danlo. Gold appearance with a light mist. Gentle woody orchard nose. Taste presents a very mild carbonation, almost still. Sharp barrel influence, tart apple fruit, woody bitterness.. A little empty and thin, more apple fruit would've been welcome.

750ml bottle. Golden colour, some short-lived bubbles on top and aroma of vanilla. apple, chestnut wood barrel. Taste is tart, tangy, apple, vanilla, buttery, chestnut barrel. Medium bodied, low carbonation, mellow buttery finish. Quite drinkable.
