Barrel Aged Blended Golden Sour with Apricots & Tanzanian Vanilla
Sunslayer is an unhopped raw golden ale, brewed with local barley, wheat and rye. Raw beer describes the primarily historic practice of brewing beer without boiling the wort. this can create interesting nuance, providing a fresher, deeper malt character.
We fermented this raw ale with a blend of Brettanomyces strains, along with our house culture of yeast and bacteria for 3 months.
The beer was subsequently blended (80/20) with a 2-year-old golden sour ale, aged in wine barrels. this blend was then refermented with 200g/l of Spanish apricots and Tanzanian vanilla. the resultant beer has intense stone fruit, along with a delicate but growing funk.

Hazy pale blond colour with thin head. There's a dill pickle aroma to this which is weird. I can pick out the vanilla quite well but the pickle juice comes back. Whey-like taste. Not quite working as it maybe should.

Bottle sample at a tasting at Yoav's place. Cloudy yellow. Apricot, celery, beetroot, some vanilla, sour, unripe apricot.

Bottle. Don’t know where from. Label on the top says £8.95. Think I’ve gone fucking mad somewhere. Fridge clear out job. Looks great to be fair. Hazed deep orange with the best sticky white foam ever. Nose has apricot jam on well buttered toast. Good custard. Soft oak funk. Taste is tart but custardy. Dry and pithy bitter. Smooth on the palate with a light acidity. Decent body with fine carbonation. Clean fruit finish. Won me over this one.

375ml bottle at Alpha Bottlshop, Bristol. Pours cloudy yellow orange with a few bubbles of head. Aroma: funk, tart fruits, sour apricot & peach. Taste: moderate sour, tart fruits, apricot, vanilla hints. Medium body with low carbonation.

Bottle at a friends. Pours hazy orange, nose is funk, apricot, light cream, taste is juicy fruit, tart, funky, creamy vanilla.
