A Saison Apparent! This blend has received the thorough Brettanomyces treatment. The Saison style originated near the border of Southern Belgium and Northern France as a farmhouse style beer with a low ABV% to serve the workers in the fields. Today, Saisons have evolved to be quite versatile in style, and substantially less sessionable. With the signature fruit esters and dry, hyper-attenuated finishing gravity from the diastaticus variant of the primary yeasts, it pours a rich copper to orange. The pairing of Saison with Brett is a hand-in-glove mating of dry, complex fruit with the earthy funk and deep flavours only a matured wild beer can achieve. Despite a tendency of wild yeasts to completely consume the resultant flavour profile of the primary yeast strains, we feel this blend achieves the balance of wild while preserving the traditional Saison character. We focused on an explicit lack of subtlety with this beer. Brettanomyces is undoubtedly the star of the show with esters playing the supporting role to round it out. As is our broader intention with all of our blends, we strive to showcase the fermentation characteristics above all else.

Bottle. Color: Clear amber, beige head. Aroma: Tart, fruity, apple syrup, some Brett funk. Taste: Over moderate tartness, some lightly spicy Saison yeast, fruity apple syrup, hints of gooseberry, grape and stone fruit. Subtle Brett funk and wood. Medium body, below average carbonation. Ok.

Amber, bright. Acetic, tart, no fruit in this one. Flat and i’m looking for some nuance other than wood and sour.

On tap at Lore, pours a clear copper with a s all white head. Aroma has plenty of musty yeast, rustic notes, and a touch of oak. Flavour is highly acidic, with some oaky barrels, light rustic notes, and intense citric acid. Way too acidic—how is this happening without fruit? Needs fixing.

On tap at the brewery. Pours clear gold with a white head. Musty sheep wool and earthy yeast on the nose. Flavour has a damp wool character and some lemon juice acidity. Not really a fan of how the yeast comes across and the beer itself doesn't have much depth.

Probably my least favourite of the lot. Rotten raspberry and gooseberry--something really sour. More acidic than their fruit sours, and here I was expecting something more chill since it was a saison. Some astringent vibe kicks in on aftertaste. Tap at brewery

Keg at Mikkeller Exmouth Market, 14/02/24. Deep golden pour topped with an off white head. Nose is funk, lambic-esque, green berry must, damp alleyway, oak, hint of dry rot. Taste comprises barnyard notes, lemon peel, herb, green berry stones, funk, pissy, damp cloth, hay bale. Medium bodied, fine carbonation, semi drying close with a well balanced but sharp edged acidic rise. Solid sour edged saison, well balanced and nuanced.

Bottle from HOTM. Light hazy orange pour with a white head. Nose is citric peel, sweet spice, orange marmalade, peach. Taste is orange marmalade, lime, zesty lemon. Long bitter citrus linger.

750ml corked and caged bottle. Pours a hazy orange-copper with a small, foamy, short lived, off-white head that leaves spotty lacing. Aroma of spicy rye malt, wheat, apricot, peach, funky Brett, green apple and oak. Sweet, spicy flavour of rye malt, wheat, green apple, lime, apricot, peach, funky Brett and oak in a dry, sour finish. Medium body with an oily texture and average carbonation. Delicious and complex.
