In December 2017 we brewed a massive long-boil Imperial Stout destined for barrels. The three-day brewday helped concentrate and intensify the flavours and alcohol without the addition of any adjunct sugars.

Sea Song blends 2:1 parts red wine and bourbon barrels to produce a slightly vinous and fruity blend, with notes of toffee before an intense bitter dark chocolate finish.

Serve at room temperature and enjoy with friends.
This beer should have excellent ageing potential.

Bottle at home. Pours black, nose is red wine, berries, chocolate, vanilla, coconut, taste is sweet, berries, huge wine notes, bitter, chocolate, ashes, boozy. 8/8/6/5/6

Bottle shared at the Columbus tasting 19/12/2019. Many thanks. A oily dark brown coloured pour with a loose dark tan head. Aroma is salty roast, liquorice, salty, rich cake malt, dark dried fruits, rich roast, dried fruit, rich tangy dried fruits. . Nice woody farmyard, robust earthy farmyard roast, Palate is rich , tangy, oily, moderate carbonation. Really rich stuff.

Bottle split (#128/302) at L6 Xmas Karnage tasting, thanks to Kenny, 19/12/19. Black topped with a lasting tan covering. Nose is charr, light smoke, chocolate, dried fruits, toffee. Taste comprises chocolate cake, dried fruit rinds, spice, dates, booze, mellow barrel, roasted bite. Full bodied, fine carbonation, semi drying close. This was just 'OK' for the style … expected more depth and complexity for the high ABV.

21st December 2019 Opaque dark brown beer, bubbly dark tan head. Smooth palate, mildly dry, decent fine carbonation. Bitter dark malts, bitter dark chocolate and bitter coffee. Some rubbery bitterness in there. Spice in the mid. Juicy red wine. Fruity bourbon but also quite bitter and savoury. Spicy finish. Well, there is plenty of flavour here hut fuck me it’s pretty harsh! The red wine element is very good but something has gone wonky elsewhere, so bitter, rubbery and savoury that it is pretty hard to drink. A rate misfire from this cracking young brewery.

Bottle massive thanks to Mark! It pours thick opaque black with a nice tan head. The aroma is rich roasted malt, sweet - sour, tart, tangy, vinous, chocolate cake, powdered chocolate, bourbon biscuits, coffee, mocha, umami, liquorice and some fruit jam. The taste is dry, rich roasted malt, coffee grounds, warming booze, big vinous character, tart, tangy berry, fruit compote, Victoria sponge, bourbon, vanilla, toffee, slight banana split vibes, burnt toast, peppery spice and warming alcohol with a roasty and fruity finish. Full body and fine, prickly carbonation. Good depth of flavour.. Nice vinous fruity character.

A special one. Lots of wine from the barrel ageing, not much bourbon. The tannic red wine doesn't completely work with the big chocolate of the malt, makes it a bit astringent and sharp. Boozy and rich, once you get beyond that.
