私たちが溺愛するドルトムンダーは今回が第４弾です。毎回違う性格のものを作り分ける楽しみは尽きることがありません。光沢と艶のあるクリアネスな外観は、かつて、濾過を疑われたほどです。創業から今も変わらず、無濾過ながら美しく磨き上げることが私たちのこだわりです。このスタイルらしい、厚みのあるフルボディな飲みごたえと、低温発酵・低温熟成でクリーンな味わいは、酵母の素晴らしい健康状態の維持と、緻密な温度管理よって実現しています。

七福神の紅一点と呼ばれる弁財天の名に相応しい華やかさと気品のある装いを期待して、今回ばかりはドイツホップではなくフランスのアルザス産ホップを使用しました。梨やハーブを想わせる華やかな余韻を醸しつつ、主張しすぎない慎ましさがこのラガービールには非常に合っています。また、抜擢したホップはシングルホップですが、投入のタイミングを3回に分けて、加わる温度と接触時間に変化をつけて、同じホップでも違った表情が複雑さを生むという手法を用いています。

モルトの豊かな味わいと、華やかで慎ましいホップの余韻、クリーンで後に引かない苦みは凛としています。フランスホップを着こなした、モダンで、エレガントなドルトムンダーは、フランスとドイツの両方の文化が息づくアルザス地方の美しさを想起させます。

This is the 4th edition of Dortmunder, which we love. The fun of creating different personalities each time is endless. The glossy and lustrous, clear appearance was once suspected of being filtered. Our commitment has not changed since our founding, and we are committed to polishing beautifully without filtering. The thick, full-bodied taste of this style and the clean taste of low-temperature fermentation and low-temperature aging are achieved by maintaining the excellent health of yeast and meticulous temperature control.

This time, I used French Alsace hops instead of German hops, hoping for a gorgeous and elegant outfit suitable for the name of Benzaiten, which is called the Red One of the Seven Lucky Gods. A gorgeous finish reminiscent of pears and herbs, while not overly assertive, is a perfect match for this lager beer. In addition, although the selected hop is a single hop, we use a method in which the timing of input is divided into three times, the temperature applied and the contact time are changed, and different facial expressions create complexity even with the same hop.

The rich taste of malt, the afterglow of gorgeous and modest hops, and the clean, unobtrusive bitterness are dignified. Dressed in French hops, the modern and elegant Dortmunder is reminiscent of the beauty of the Alsace region, where both French and German cultures live.
