375ml bottle from Appalachian. Haven't they done bourbon before? Clear, pale, straw gold. Settled bottle says I will have a murky second pour. Smells of fresh autumn apple, soft spice & warm booze poured innocently into a punch bowl. Taste is a slight green apple tartness(malic acid like), stemmy herbal bitterness, some residual Halloween candy sugar, & a soft rounding of vanilla & bourbon that trails. All very simple. The slight sweetness (unusual for Botanist), really pushes the sharpness forward. Very yeasty by the second pour as I predicted. This isn't wild, aged on Appalachian mountain herbs or a pet nat, but it's better than fair. Good carbonation, surprisingly mellow booze, punchy apple tartness, not too thin. Okay.
