(Bottle) Pale golden colour with big, but brief, foamy white head. Fruity, floral nose with apples, apple skin, citrus, hay, minerals, yeast and a touch of cinnamon. A light touch of sulphur. Fruity, tart taste with apples, apple skin, hay, flowers, citrus, minerals, yeast, yellow plums, a touch of wood and a dry and tart finish. Medium body, dry. Dry, well balanced and solid cider with a fresh acidity. Very nice.

Bottle I finally said yes to after a long time wandering around the aisles of Tasty Beverage in Asheville. Slender Rare Vos glass. Big plume. Crazy nucleation. The appearance of a coarsely filtered wheat beer. Minerally. Hay. A green, unripened, acid nose. Sour, like early plums. Tight sparkling wine. Bittersweet apple skins, stone, tea leaves, brine. Big acid. Faint metal. Woody, drying mint finish. Juicier as the carbonation dies & the leftover yeasties invade. This is just straight up well done.
