Grails and Waysigns is an open fermented wheat beer inspired by stories of 19th and 20th century Belgian and French farm beers.

The 2018 blend was fermented in an open top oak tank with a mixed culture of yeast including strains appropriated from some of our favorite saisons. Brewed with wheat, pilsner malt, aged and fresh English and German hops, and water from the Cedar River Watershed. After primary fermentation it was aged in white wine barrels until ready. It was refermented in the bottle, and will continue to develop over time.

Hazy, pale, no head. So lots of stone fruit and brett on the nose, very appetizing. Earthy, bitter, a touch of hop to it. Again, that stone fruit bitterness. Fruity, refreshing, the fruit-brett dynamic works, with a touch of bitterness.

Poured from 750mL bottle. Hazy gold with small white head. Saison yeast, touch of oak. Okay.

750mL bottle, pours a hazy golden with a small white head. Aroma is full of wild yeast, rustic saison yeast, and gentle oak barrels. Flavour is very buggy, with rustic saison yeast, a little oak, and some gentle horse blanket. Buggy and wild but not all that complex. Good.

Bottle thanks to Chow. Pours a hazy yellow gold with small white head that lasts. The aroma is oak, funk, apple skin, floral. Thin body, funky, oak, nice tartness, light dry finish, really enjoyed this.
