Originally a blend of Kapittel Pater and Kapittel Prior, now an original recipe.
From the brewery's website:
In our brewing process for the 7,5° dubbel we use extra winter malt .
This increase in malt results in a higher alcohol content, so the yeast that feeds on the sugars in the malt is given a feast of greater proportions.
By adding sugar, also known as “Belgian candy,” we can increase the activity of the yeast, and the beer gets a second fermentation in the bottle, carbonating the beer in a natural way.
This gives the beer a beautiful and large froth.
This fine Dubbel has a rich malt aroma of malt, yeast, dark fruit, & spice; flavors of sweet malt, yeast, caramel, dark fruit, raisons, and spice, with a faint touch of pleasant bitterness, and it fills up the gap between our 6° Pater and the 9° Prior

Old rating from 2017 - 330ml bottle brought back from Belgium. Pours dark brown with a white head. Aromas & tastes of chocolate, raisins, wood, caramel, cherry, apple & roasted malt. Medium body. Sweet smooth finish

Bottle at home. Aroma of malt, caramel, raisins, dark fruits, some roasted notes, some chocolate. Flavour is sweet with a moderate bitter finish. Body is medium. Surprisingly rich and tasty Dubbel.

Bottle from Drinks Vanuxeem, Ploegsteert, Belgium. Pours a very very dark brown with a reddish hue and a huge thick foamy beige head. Aromas of dry dark fruits, plums, cherries, caramel and brown bread. Taste has more of the fruits described in the aroma with added fruity notes of red berries, apples and some blackcurrant. Also some vinous notes leading to a slightly tart finish. Nicely balanced. Medium body with a light spritzy mouthfeel. A touch too tart for my personal preference but still a good and very well made beer.

Appearance: Cloudy brown with a decent beige head. Aroma and taste: A classic balanced.Dubbel. Moderately sweet. Light ending bitterness. Mouth feel: medium plus body, approrriate carbonation. Overall: Pretty good.

Bottle from Belgiuminabox, Antwerp. Mahogany coloured pour with a beige head. Red apple, sweet malt, red fruits in the aroma. Taste is sweet malt, jammy red fruits. Sweet malty mouthfeel. Quite tart in the close.
