Originally a blend of Kapittel Pater and Kapittel Prior, now an original recipe.
From the brewery's website:
In our brewing process for the 7,5° dubbel we use extra winter malt .
This increase in malt results in a higher alcohol content, so the yeast that feeds on the sugars in the malt is given a feast of greater proportions.
By adding sugar, also known as “Belgian candy,” we can increase the activity of the yeast, and the beer gets a second fermentation in the bottle, carbonating the beer in a natural way.
This gives the beer a beautiful and large froth.
This fine Dubbel has a rich malt aroma of malt, yeast, dark fruit, & spice; flavors of sweet malt, yeast, caramel, dark fruit, raisons, and spice, with a faint touch of pleasant bitterness, and it fills up the gap between our 6° Pater and the 9° Prior

Bottle from Beers of Europe. Deep amber colour with a thick foamy head. Aroma has caramel and some Belgian yeastiness. Taste slight dried fruit, and toffee. Full rich body.

Raisin aroma. Slight toasty bitter flavor, but the raisinny sweetness rules. Hint of cherry and metal. Maybe a bit thin for the fairly high ABV. Nice beer that lacks depth.

330ml bottle. Hazy, chestnut colour with average to huge, fluffy-creamy, moderately lasting, minimally lacing off-white to beige head. Yeasty fruity aroma, minimally sugary, malyt background, notes of dried fruit, cherry, plum, raisin, a nuttily malty touch as well. Taste is dry, minimally tart, yeasty fruity and nutty malty, notes of apple, baked apple, green apple parings. hints of fried fruit, raisin; slightly overcarbonated.

bottiglia 33 cl, bel cappello di schiuma beige media grana persistente, color marrone limpido, al naso malto spezie zenzero zucchero di canna, in bocca spezie uva passa prugna sciroppata, corpo rotondo, alcool ben bilanciato, carbonazione decisa, dolce con amaro moderato, secca nel finale. Non una delle migliori Dubbel. Mi sarei aspettato di piu. Abbastanza anonima. 30.08.18

Bottle from Belgibeer. Dark nut brown with a large head. Aroma of dark fruit malt. Flavour is dark fruit, caramel malts, toffee malt, chocolate finish.

F: huge, bit tanned, long lasting. C: dark brown, red bit hazy against the light. A: malty, red fruits, cherries, bit chocolate, brown sugar, burned herbs. T: malty, sour cherries, red fruits, chocolate, bit caramel, bit yeasty, medium body and carbonation, Dubbel as many other here in Belgium, nothing special, 33cl bottle from Prik & Tik Leuven.

Murky brownish amber, big and fluffy light beige head. Caramely aroma. Flavour has malt, caramel, notes of dried fruit, light spice and something sour.

0.33l bottle. Very dark ruby body with a light brown foam. Aroma of reisins, toast, sour cherries and chocolate. Taste of chocolate, sour cherry, orange zest, toast, cloves and grassy hops. OK beer.
