For the 2017 harvest, we selected Vidal Blanc grapes from Noboleis Vineyards in the Augusta AVA along the Missouri River, located 32 miles west of our brewery. For this project, we used the same malt bill as our collaborators and co-fermented the wort with the must of the Vidal Blanc grapes. We then took inspiration from the process of making orange wine, allowing the skins to stay in contact with the hybrid as the native microflora from the must and our Missouri cultures used in our brewing co-fermented the hybrid. After 2 weeks in stainless, the hybrid was racked to French Oak 225L Barrels and 500L Puncheons and aged for 11 months before being naturally conditioned in the bottles and kegs

(Bottle) Golden colour, slightly hazy, with frothy white head. Fruity nose with citrus, grapefruit, funky yeast, gooseberries, green grapes and oak wood. Fruity, tart taste with notes of citrus, grapefruit, gooseberries, oak wood, barnyard, green grapes, green apples and pears. Low bitterness. More than medium body, dry. Tart, fruity and fresh (despite being eight years old). Very nice.

Poured from a 375 ml, vintage 2028 bottle. Aroma is full of white wine grapes notes and must with light oak notes and a touch of lemon and pineapple. A light buttery note and a touch of malt. Pours a hazy, yellow gold with a small, thin, white head that recedes quickly and disappears. No lacing and faint legs. Flavor is somewhat acidic with a light sweetness and faint grain note. Light bitterness and a touch of alcohol spice. Moderate white wine grapes notes and must with a medium light oak note. Light buttery notes with a touch of lemon and pineapple. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a decent beer but the white wine notes are a bit strong and buttery for my preference.
