We first started with a recipe of a red/brown Belgian-inspired beer and hopped with aged hops from the Jester King Farm. Almost every coolship beer we had heard of consisted of the traditional “lambic inspiration” of pilsner and unmalted wheat, so this red/brown beer recipe was far from the normal for a coolship beer.
After more than 2 years of a quiet, slow fermentation in French oak, we then racked the mature natively fermented red/brown beer to a Missouri Oak Foedre with a light addition of raspberries, blackberries and cherries.

Bottle pours out red pink topped with a small fizzy head. Nose is nice fruit mix cherries, raspberries, some purple grapes big oak barrel and funk. Taste is more of the nice sweet tart fruit mix cherries berries grape oak complex great

Bottle. Pours a cloudy copper with small off white head leaving spotty lacing. The aroma is strong oak, cherry skin, funk, barnyard, leather. Slick body, grape, berry, cherry, oak tannin, leather, light acidity, nice funk, enjoyed this.
Nose of cheesy cranberry funk (no cranberries in this though) it's a bit overly tart upfront and finish at the moment but tons of berry sweet and sour flavor throughout. Should age amazingly!
