This beer is fairly new (batch 2), but it relates back to the origins of farmhouse ale at Jester King. Mineral-rich water, combined with a rustic malt character, herbal/spicy hoppiness, and wild fermentation is our main calling card. To achieve a rustic malt character, we brewed with malted barley, rye, spelt, and wheat, naked oats, and unmalted purple corn. We kettle and dry hopped with organic Perle and Fuggle hops from The Oregon Hophouse and fermented in stainless steel with our mixed culture. Unfiltered, unpasteurized, and 100% naturally conditioned in bottles and kegs.

Batch #1. 750ml bottle. Pours opaque straw yellow with a frothy white head. Aroma: wheat, grains, minerals, prominent saison yeast, herbs. Taste: light to moderate sweet & light bitter, wheat, saison yeast, minerals, floral, herbal, funky. Medium body with soft carbonation.

Pours bright, clear gold into a tulip. Bright white micro head with good retention recedes leaving gloppy sheets. Lemon, hay, funk and honey aromas. Sharp with sweet biscuit, oatmeal, tart lemon and funky meringue upfront turning to dry, dusty funk in the earthy, lasting finish.

750ml bottle. Tartish, zesty lemony and citrusy with some grainy maltiness, farmyardy funky yeastiness and hints of grassy hops. Refreshing and pretty complex.

Bottle sample at a tasting at Yoav's place. Cloudy yellow. Bretty funk, fruitiness, floral, a bit of earth, slightly sourish, dry, moderately bitter finish. Very nice.

Creamy white good mostly lasting head. Yellow colour. Moderate malty and heavy hoppy and moderate bretty aroma. Moderate bitter flavor. Average moderate bitter finish. Oily palate.

ABV: 4.5%. Cloudy medium yellow colour with a large, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, wheat, grain, moderate yeasty, minerals, saison yeast, herbs. Flavor is moderate sweet and light bitter with a long duration, wheat, oat, herbs, saison yeast, minerals, floral, light funky notes. Body is medium, texture is oily to watery, carbonation is soft. 75cl Bottle. Thanks to SirAlex. Pours hazy yellow with a small White head. Funk, slight barnyard and citrus. Minimal Esters. Dry. Lovely. Slightly too carbonated.

Cloudy pale golden with a lasting white head. Fruity aroma with with apricot, lime and a touch of funk. Dry and fruity flavour with refreshing, slightly tart note. Really easy drinking, and very well rounded for the strength
