This beer is fairly new (batch 2), but it relates back to the origins of farmhouse ale at Jester King. Mineral-rich water, combined with a rustic malt character, herbal/spicy hoppiness, and wild fermentation is our main calling card. To achieve a rustic malt character, we brewed with malted barley, rye, spelt, and wheat, naked oats, and unmalted purple corn. We kettle and dry hopped with organic Perle and Fuggle hops from The Oregon Hophouse and fermented in stainless steel with our mixed culture. Unfiltered, unpasteurized, and 100% naturally conditioned in bottles and kegs.

Keg draught at BrewDog Brighton. Dark gold and cloudy with a thin uneven white head. Aroma is horse blanket funk, light musty citrus. Tastes really funky but not outright sour. Very overripe citrus. More sourness appears closer to the finish. Stings a little in the back if the throat. Medium body with almost no carbonation. A great experience but perhaps a beer to be respected rather than loved?

Pale, with a light haze. Medium head. There's a big fruity note, like salmonberries, and light malt.

750 ml bottle. Pours amber with light head. Aromas of grainy malts, saison yeast and candied lemon. Flavors follow same with rye sharpness and dried grain, plus additional saison yeast and earthy hops. Nice carbonation. Very tasty for the ABV

Bottle pour at Farmhouse Fest 2024. Pours clear yellow with an off-white head. Aroma has dry grass, grainy malts, light citrus peel. Flavour has light dried grass and grainy malts. Bitter finish.

Bottle pour at FHF 2024, pours a clear bright yellow with a small white head. Aroma brings out bright tangy hops, some rustic notes, and toasted grains. Flavour is hoppy as hell, with lots of tangy dry-hopping, rustic saison yeast, and toasted grains. Tangy, hoppy, and integrated. Excellent.

FHF 2024. Appearance: hazy golden with a white head. Aroma: very fresh and fruity, nice. Taste: a bit tart, quite bitter. Finishes with a lot of hops. Overall: kinda too bitter to me, not very nicely balanced.

(Draught at BrewDog Camden, London, 9 May 2024) Pale golden colour with big, frothy, white head. Hoppy, spicy nose with notes of citrus, hay, bread, spices, cardamom and yeast. Fruity, spicy, slightly tart taste with citrus, grapefruit, lemon peel, hay, bread, funky yeast, grass and a balanced citric/grassy bitterness. Medium body, dry. Fresh, tasty and quite complex. Very nice.

Keg at BD Union Sq. It pours clear golden - amber with a small, fluffy white cap. The aroma is musty, damp, dank, funky, barnyard, brett , lemony sherbet, lime, white grape, gooseberry, apple skin, peppery spice and cereal. The taste is crispy, dry, snappy, quite spicy upfront, toasty grains, cereal, nuttiness almost, deep funk, barnyard, damp hay, damp wood, tart citrus, lemon, lime, sherbet, apple/pear skinnand some tannin with a drying and funky finale. Average body and prickly carbonation. Rather nice overall.

Keg at BrewDoge Clerkenwell, 10/05/24. Moderately hazed yellow to golden topped with a white head. Nose is lemon rind, grains, barnyard nip, funk, herb, yeast esters. Taste comprises lemon peel, light white peppery spice, straw, grains, biscuit, farmyard bite, yeast esters. Medium bodied, fine carbonation, semi drying close. Decent well balanced saison delivering good flavour for the ABV.

Tap at Brewdog Waterloo. A translucent brushed gold coloured pour with a a fine white head. Aroma is tart green apple, foraged green berries, spelt, white grape, vinous funk. Flavour is crisp, lemon twist, herbal citrus, grass, crisp white wine, white grape. Delicate stuff. Palate is crisp and delicate fine carbonation. Lovely.
