For this Saison, the intention was rooted in delicacy, with our first "dried fried" usage. We sourced these dried Satsumas from a small importer who also assisted in our banana nibs for Brooklyn Vibes and some Yuzu juice for another soft Saison. The result is a beer fitting of the Side Project name and one which we hope to brew again soon. Overripened citrus, with a very soft palate, round tartness and vibrant aromatics create a very delicate experience.

375ml (thx, Josh!) @ Matt's house. Blend #2. Appearance: cloudy blonde with a white head. Aroma: rustic notes, oak, some fruity notes. Taste: along the same lines, with some weird light, but easily noticeable meaty notes. Overall: ok.

Slight haze, quite pale, not a whole lot of head. The aroma has a good wild yeast character, and a lot of citrus. That mandarin comes through with its characteristic bright sweetness, it's got a fair bit of tartness, and light bugs.

500mL bottle, pours a hazy golden blonde with a small white head. Aroma has plenty tart citrus, some wild yeast, and some straw-like notes. Flavour is quite citrusy, with plenty of orangey citrus, some wild yeast, and light acetic notes. Not the most complex, honestly; a bit too acetic. It's decent.

375mL bottle drunk 4/1/23. Blend #2. Clear blonde, small, white head Gentle mandarin, not very floral but very soft with Brett and lacto. Clean, biscuity malts. Juicy, fruity, good mix of soft citrus and and lactic acid. Vanilla, soft oak, juicy citrus, fruity Brett, malt and good attenuation.

Bottle. Pours a hazy golden with medium frothy white head leaving spotty lacing. The aroma is strong citrus, oak, floral, yeast. Medium body, lemon zest, oak, juicy, light tartness, delicate, really enjoyed this.
