After La Ruche had been fermented in and aged in Missouri Oak for several months, we then took the mature La Ruche and racked it to two, fresh French Oak Burgundy barrels from Saint Aubin and allowed our honey Saison to continued the oak-aging. This added deep layers of complexity and soft, rounded oak nuances to Oude La Ruche which was aged for 18 months in oak and bottle conditioned for 12 months before its release.

750 mL bottle drunk 9/29/23. Dark brass-maize. Small, white head to ring fairly quickly. Pungent peach-apricot, some random umami. Rich malt showing bread, vanilla, honey. Tons of pepper, peach skin, nectarine...Interesting with some cheesy lactic character and light oxidation. Juicy citrus, orange wine for days and tons of white pepper, wheat and rustic grain. Light vanilla oxidation, very nice malt depth and attenuation. Juicy, cheesy, interesting as hell and nice mellowness.

2017 Vintage. Pours a cloudy gold with small white head that lasts. The aroma is strong oak, citrus, grape, funk. Slick body, funky, grape, oak, nice tartness, juicy, so balanced, enjoyed this.
