This Imperial Stout has been brewed to honor Alom, the Mayan god of the sky and wood. Wood from the Spanish Cedar tree meets cinnamon, vanilla, cacao and chili pepper additions to create a celestially inspired and wholly beatific Imperial Stout.

750 ml bottle thanks to TJ. Aroma is the Huna with a significance cedar hint. Flavor shows the spicy cedar with cocoa and chilies. Cinnamon is mild. The cedar does change the Huna base. Whoa!!

Bottle. Very dark brown color, thin tan head. Aroma of boozy licorice. Taste is rich dark chocolate covered licorice candy. Very tasty.

750mL bottled 2020, drunk 3/18/23, thanks Chalumeaux! Dark. Head to ring. Lots of cinnamon, vanilla, maybe some lactose? Strong, rich, bready, heavy brown sugar. Not aggressive but heavy vanilla-maple sweetness. No booze. Excellent attenuation and dryness with bourbon spice and savory pepper and vintage barrel. Wow that's lovely, and so dry but still soft. Damn, glad that's an improvement from the nose. Fair amount of cinnamon dryness but still there's enough malt. Love the bourbon character. Needs a little more time for the cinnamon to burn off.

Bottle split with SirAlex and Crazy Joe Davola. Corona share #15. Pours pitch black with a creamy beige head. Heavy roasted nose of charcoal, spices and coffee. Some cedar, chocolate and cinnamon. Smooth and full bodied. Dry roasted bitter finish. A big beer.
