Ale Fermented in Oak

Death Come Quickly is a blend of wheat saison fermented in oak and refermented on raw honey.

The 2019 harvest blend was created from well aged mixed culture saisons brewed with raw wheat and malted barley grown in Oregon and Washington.
This blend underwent a very slow refermentation on raw Star Thistle and Knapweed honey harvested in Ellensburg, Washington.

This beer was refermented to condition in the bottle with raw Washington honey.

2022 harvest. Pale, with a full head. Slight haze. The aroma has a complex bugginess, with stone fruit and gooseberry accents. Full body is soft, with a fair bit of honeyish sweetness, along with farmy accents and a bit of oak. Solid stuff, as usual.

Snallygaster 2023. Pours gold. Floral, herbal, minerally, peach fuzz, white grape, Gewurtztraminer. Medium body. Amazing.

750ml (thx, Drew P. for pick-up and delivery) @ Sales Force. Appearance: hazy blonde with a white head. Aroma: a lot of bugs and funk, very nice. Taste: along the same lines, nice refermented honey, nice barrel. Overall: good one.

Poured from 750mL bottle. Hazy yellow with white head. Quite buggy, a bit of honey, wild yeast, some oak. Quite nice.

750mL bottle, pours a fairly clear blonde with a large white head. Aroma is full of complex bugs, with lots of oak, fermented out honey, and wild yeast. Flavour is complex, with loads of complex wild yeast, mostly fermented out honey -- though there is a tiny hint of sweetness -- followed by lots of oak and more bugs. Complex, buggy and well-integrated. Excellent.

750ml bottle pours out hazy straw topped with a white head. Nose is nice funky wet wheat notes some citrus and a soft spice. Taste is more of the nice light wheat notes wood and some citrus funk.

Bottle thanks to Everett. Pours a cloudy yellow with medium white head leaving spotty lacing. The aroma is funk, mineral, oak, lemon. Slick body, citrus, oak, light tartness, very nice.

750ml bottle at share. Hazy straw color, soft, frothy white head. Aroma and taste are bready, touch of yeast. Floral and savory notes. velvety smooth. great in every department.
