Soak: our line of sour wheat ales, aged in oak, featuring a variety of single fruit additions. We ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we referment fruit in the base beer after primary foeder fermentation to “soak” for a deep extraction of unique colors, aromatics, and flavors. Delightfully acidic, but not funky, our Soak series is an approachable sequence of wild offerings that we are proud to share.

Eye catching dark pink in appearance with light haze, Blueberry Soak has a lively nose with aromas of pressed concord grape and bramble fruits. Flavors of ripe blueberry and raspberry lead on the palate with a touch of tart lemon zest. Blueberry Soak has a delicate tannic structure and a subtle wheat grain backbone with undertones of wet oak. Features a light body and clean, semisweet finish with a refreshing champagne-like carbonation.

On tap at Shelton Festival. Pours a cloudy purple with medium pink head that lasts. The aroma is blueberry, lemon, wood, funk. Slick body, jammy, blueberry, grape, lemon, funky, wood, very nice.

33cl bottle pours a sexy looking garnet amber with some clumpy head. Nose is jammy, tons of Cabernet notes, Syrah too, blueberry is there, some pith too. Flavor is more clear with blueberry but man is there a lot of red grape and Syrah, inky now. Finishes tart but the berry hides the acid well.

Bottle at the DC Spring RB Tasting. Poured a super deep raspberry red color with a huge, fluffy light reddish/pink color. Aroma was blueberries. Super tart, sour blueberry. Fruity. Sour, decent. Pretty nice.

Blueberry is pretty thick here and puts great infusion into this. Pours Ruby red with good head and Iacing. Very fruity and nice balance. Good stuff. Bottle. Nice stuff.

11. 2 oz. bottle. Ok, I want to believe that this is different from the “Super Soak”. Not totally convinced. The flavor does have less sharp sour notes but the oak is still strong. This doesn’t display any vinegar like the July 2018 Super Soak bottle I had. Blueberry charater does seem more forward.

Pours a great looking deep red/purple from a bottle. Big hit of tart fruit, a little more like blackberries. Flavor is a tart blueberry, someone compared the tartness to the same level as unsweetened cranberry juice, I'd say almost but not quite. Pretty good beer.

Pours deep ruby into a tulip. Pink head with excellent retention recedes leaving no lacing to coat surface. Blueberry and aspirin aromas. Tart with blueberry and aspirin upfront turning to mild earth in the medium length finish.
