Il nome che abbiamo scelto per l’intero progetto che riguarda lo stile Italian Grape Ale è Û, ovvero uva in dialetto bolognese, e si divide in due birre ad edizione limitata: questa dove è stata utilizzata uva a bacca bianca e sua sorella Û baccarossa.

L’idea è stata fin da subito chiara: lavorare con vignaioli naturali di cui apprezzassimo la genuinità dei vini, che abbracciassero la filosofia dei lieviti indigeni (visceralmente legati ad una specifica uva e ad uno specifico luogo) e coltivassero vigneti storicamente radicati al territorio.

half champagne bottle from Piwnemosty.pl in Wroclaw. (Dolny Slask). mega dzikie skorzane, stajnia jedzie mocno, pot , ten wloski lambick jest niesamowicie fetyszystowski. Sexy zapach kobiecych stop, przepoconej bluzeczki. Zaczalem od tego co sie pojawialo pozniej, a na poczatku bylo slodki calusek ktory niczym jak po spoliczkowaniu kobiecej zgrabnej dloni z tej slodyczy wytwarza sie wlasnie to co uwielbiam w kazdej masci lambickow. Doskonale serowe, w smaku grana padano z makaronem, winogrona herbata jasminowa na koniec. Wyglad. jasna lekko czy srednio metna barwa poczatkowo ze srednio piana, po chwili opada szybciutko. Ladna stylowa etykieta niczym naszkicowana olowkiem. to piwo jest art, to lambick dwuznaczny, to kreacja w stylu wloskim to wszystko jest umowne, to wszystko jest the best.

No dzikie, kapinke smrodliwie dzikie, winogrona w tle, nie do konca wcale wytrawne... dobre to calkiem ale bez podniety

A hazed golden lambic with a thin white head. In aroma, beautiful sweet mix of grapes, light Brett, light leather notes, very nice and complex. In mouth, a nice sweet fruity malt with light grapeskins, musty notes, light Brett, light lactic notes, very nice and complex. On tap at Vices et versa.

A lovely wild ale with some strong flavours. Nice, fairly light tartness. Lots of grape and white wine, but sparkling and zingy, almost citrussy. Wood, just a tiny bit of funk. Flavourful, smooth, easy and nicely refreshing.

Sample at Sour Spring Break, Helsinki. Colour is slightly cloudy orange with almost no head. Aromas and flavours: Dryness, some sourness, berries, fruits.... little bit of boring.

Corked bottle. Orange blonde color. Brett, oak and grapes in the aroma. Sour flavor, citrus, oak, grapes. There is some complexity. Good one.

Ca' del Brado's attempt at spontaneous fermentation enriched with white grapes and the counterpart of Baccarossa tasted next to it. Thanks Craftmember for sharing. Egg-white, loosely knit, bubbly and thin, open and unstable head on a hazy yellow-straw blonde beer with warm golden hue. Aroma of fermenting white grapes indeed (more white grape in this one than there was red grape in Baccarossa), green gooseberries, wet leather-like Brett effects, yoghurt, sourdough, vanilla-like wet oak wood, dry white wine, dry hay, cider. Tart, crisp onset, green gooseberry and unripe pear meeting sour white grapes, softish carb, lime-like acidity continuing to dry a supple, doughy and cereally malt body; sour fruitiness and lactic tartness penetrate a tannic finish with mild grape skin astringency, light Brett effects, woodiness and ongoing fruity juiciness. More 'wild' and funky, so in that sense perhaps more accomplished than Baccarossa, with more depth and maturity to it, yet - like Baccarossa - still remaining smooth, streamlined and a bit simplistic compared with its 'real' lambic counterparts from the Senne Valley (though comparison with e.g. Cantillon's Vigneronne is probably a bit unfair).

From backlog. Draught @ Sour Spring Break. Vinous, dry and earthy with loads of grape juice, hints of leathery yeastiness and bretta. Okay.
