Il nome che abbiamo scelto per l’intero progetto che riguarda lo stile Italian Grape Ale è Û, ovvero uva in dialetto bolognese, e si divide in due birre ad edizione limitata: questa dove è stata utilizzata uva a bacca bianca e sua sorella Û baccarossa.
L’idea è stata fin da subito chiara: lavorare con vignaioli naturali di cui apprezzassimo la genuinità dei vini, che abbracciassero la filosofia dei lieviti indigeni (visceralmente legati ad una specifica uva e ad uno specifico luogo) e coltivassero vigneti storicamente radicati al territorio.

I Draught /I Small white head over faintly hazy orange beer. Very gueuzy nose, horseblanket, wet (horse) straw, lemon, sweet woodruff. Flavour is sweet woodruff², sweetish-sour. Phenomenal, if the woodruff isn't added effectively. Sweet & sour in perfect balance, mild horsblanket, barnyard. Not very vinous, however. Tittilatin MF, light to medium bodied. (wheat?)slick. Est! Est!! Est!!!

Bottle. Ranzanino, Bologna. Pale amber colour. Medium haze. No head. Nose has floral, pungent white grape. Sweaty brett. Old oak. Apple skins. Taste is sweet and grapes, with a fusty, earthy, tart bitterness. Medium body. Fine carbonation. Earthy, floral and brett laden finish.

0,375l bottle at home shared with Saeglopur. BB 03.2023. light yellow lightly hazy color, small white head. smells very funky, earthy, spcies, musty, bit leathery, wood, light cork, nice smell. full body, soft carbonation, slick mouthfeel. tastes citric, earthy, spices, peppery, some white grape notes, wood, peppery, funk, grassy, light green apples. finishes dry and lightly sour with notes of grapes, citrus and some funk. very nice one, very good balance, nice funk.

Dark golden, clear body, with a small, yellowish head.
Aroma of barrel, juicy white grapes, moderate smooth cheesy funk, some citrus, some apples, nutty notes as it warms a bit.
Tastes quite similar, with more green apple and pears.
Medium, slick mouthfeel, with an average carbonation.
Finishes smooth, medium dry, wooden, moderate sour, citric, with green apple skin, lingering white grapes.
Tasty. Perfectly balanced, very smooth to drink, yet pretty complex, with lovely fruits, barrel and moderate funk. The white grapes are really beautifully showcased, leading to an elegant sweetness. Beautiful stuff.

On tap at Open Baladin in Rome. Golden cloudy and bright pour with a medium regular white foam. Nose: macerated grapes, red wine must, lemon and leather. Mouth: citric tart with a firm red wine overall. Clean finish.

On tap @Open Baladin (Rome). Dorata carica, leggermente torbida, schiuma bianca media. Al naso note di bretta, cuoio, stalla, limone, carattere vinoso spiccato, leggero balsamico. In bocca è strepitosa, vinosa, succosa, piena, tart, secca nel finale, pulita. Corpo medio, carbonazione media. Che birra! Complimenti vivissimi!

Hazy golden colour with no head. Aroma and flavour have a lot of funky lambic sharpness. Grapes, green apple, wild flowers. Some sticky fruit sugars balanced well against the citric tartness.
