Aroma: honey, some berries and tannins.
Taste: along the same lines.
Overall: pleasant.

Poured from 350mL bottle (bottled 5/10/2022; Cabernet 2021 vintage). Clear garnet red with no head. Honey with underlying red grape skins, background complexity, decent.

350mL bottle, pours a clear ruby red. Aroma has lots of red wine grape skins and fermented out honey. Flavour is on the drier side, with lots of musty dry grape skins, moderately-to-highly fermented out grape skins, and light treacle. It’s drier than I usually like in meads, but there’s undeniable complexity and depth here. Excellent.

Reddish colour, bright. This has a decent vinous note, and a woody sort of character from the honey. Has a lot of sticky honey, and then the cab cuts through with a bit of acidity. Good balance. I'd like a more complex honey character but good richness.

350mL bottle. Pours clear light red. Grainy honey and red wine grapes on the nose. Flavour has red grape skins, well-fermented honey; fairly dry throughout. Nice grape expression while retaining a fairly high degree of delicacy; nicely done.

Pours a darkened browned garnet . Scent is very grape-forward, even presenting some variety-typical notes of black fruit. tad herbal, some bell pepper, honey is fairly hidden, but provides a more 'full' experience than the wine of it's own would have had. Taste is full, smooth, veyr mild tannins - softened by the honey obviously. Lovely balance, I honestly expected the grapes to overpower more. This is a more than fine Pyment! lovely body. Mild oxidative notes (sample flask, might be unique to my sample, but I love it). Overall, pretty impressed by this one, I expected to enjoy far less than this.
