Dabinett apples combined with Derbyshire orchard apples, fermented and matured in Burgundian oak and American bourbon barrels. A secondary fermentation in bottle creates a lightly sparkling Col Fondo style cider.

Tasting Note: Col Fondo
Appearance: Light golden haze – lees present
Aroma: Autumnal apple, cinnamon bun, mint, orange zest
Taste: Eating apple, pear, soft tannins, biscuit, toast

750ml bottle from Mitchell Wines at Meadowhead - Cloudy old gold body, no head. Real sharp crab apple tannins, long bitter aftertaste, some nice warm winter spices in there as well.

Sample from 75cl bottle at Alexander Wines Spring Tasting. Appearance - golden with a light haze. Steady carbonation giving at least a temporary white head. Nose - bruised brown apple, tangy pickle and sweet spice. I'm told it's Bourbon and Burgundy barrel aged. Taste - more sweet spice, piccalilli and baked apple. Palate - medium bodied, soft but tangy middle. Carbonation is fairly light. Overall - really very interesting cider indeed!

750ml bottle from Cider is Wine. Hazy golden colour, white foam head that quickly dissipates away and aroma of apple, fruity, musty funk yeasty. Taste is tart, tangy, earthy, apple, fruity, leathery, some wood barrel notes, musty, with bready yeast hints and mellow tannins. Medium bodied, light carbonation, dry finish. Quite drinkable.
