Nieuwe American IPA van 6.9% gehopt met de Nieuw-Zeelandse variëteit Moutere en de Amerikaanse tropische fruitbom Idaho7. Stevige licht droogtrekkende bitter (50IBU) die wordt uitgebalanceerd door een volle, zachte, bijna smeuïge afdronk. De combinatie van de Golden promise pale alemout van @simpsonsmalt en een nieuw en aangepast waterprofiel deed exact wat we hadden gehoopt, creaminess creëren. Volheid zonder de hulp van restsuikers of proteïnen, uw bier is net dat beetje gezonder geworden zonder te moeten inboeten in smaak...
In het aroma toetsen van meloen, kruisbessen, passievrucht en mandarijn met op de achtergrond een lichte groene kruidigheid.

New Zealand style IPA (one can wonder if this concept deserves its own category or not) hopped with Idaho 7 and Moutère, of which only the latter is a New Zealand hop variety; named after one of Dok’s bartenders apparently, cheers Aster! Beaten egg-like, membrane-lacing, very thick and foamy, pale yellowish white head, misty deep golden blonde robe, very pure, with almost greenish tinge somewhere. Aroma of orange blossom, ripe peach, lychee, mandarin, honey, apple peel, soggy biscuit, sweet tropical flowers. Clean onset, sweetish and hop-fruity with impressions of mango and lychee as well as a dash of vague pineapple, sharpish carbonation, slick oily body; lightly biscuity, bit cracker-like maltiness under a delicate ‘subtropical’ hop fragrance reminiscent of mango and lychee again but also mandarin, lemongrass and guava, yet remaining mild in bitterness. A gently bitterish spiciness is nevertheless there, bringing structure and balance. Very elegant, streamlined IPA, in which both hop varieties are well played out.

Hazy dark ochre, stable, foamy, white head. Aroma of unripe peach, kiwi, mandarin, cheese, lime juice, mango. Taste has sweetish peach, mango & mandarin, sourish citrus zest, bit cheesy over biscuity maltiness. Piney & floral hoppy finish, lingering citrus peel and grapefruit, bitter and sourish. Medium body, oily texture, soft carbonation. Intended as 'slow craft beer' from a longer production process, this is definitely well-made and I can only cheer that decision by Dok.

23/III/22 - on tap @ DOK Brewing Company (Gent), BB: n/a (2022-276)

Clear orange blond beer, small creamy yellowish head, stable, non adhesive. Aroma: pretty malty, grains, bit dirty, sulphur notes (“putje”). MF: ok carbon, medium body. Taste: nice, pretty bitter, dry, hay, cow fodder, grains, grassy. Aftertaste: pretty bitter, dry, spicy, hoppy, grassy, a little yeasty, some malts, more like a saison than an IPA, but it’s decent.
