To make Coolship Pomme, we selected specific batches of our spontaneously fermented Coolship beer—that had fermented in oak barrels for about two years—and added a medley of freshly picked Golden Russet, Ashmead’s Kernel, Northern Spy, and Winesap apples from a local farm. We then aged that mixture for an additional four months. The result: a well-rounded and complex ale with notes of crisp apple, oak, white pepper, apricot, and a hint of funk—all with a wonderfully dry finish.

Bottle. Hazy golden color with white head. Aroma is leather, dusty, apples indeed. Taste is apples, barn, dusty stuff. Oily mouthfeel with natural carbonation. Good one!

March 21st 375mL bottling, drunk 10/4/21. Clear brass-golden with a small ring of white bubbles. Would agree with Nimbleprop that the nose outdoes the flavor. It's tart, crisp, lively and dry without any sluggishness, heavy tannin or heavy acidity. Just very light apple flesh, soft honey and mild Brett atop hay and other rustic grain-like notes. In the mouth it's oaky, peppery, chewy almost in the texture with more heft than the nose would suggest. Bit of acetic character is kind of a turn-off, though it's still primarily lactic. Lots of acidity buildup on the finish, with tart crabapple, lemon and light butter. Still quite nice despite it not quite living up to the promise of the nose. Maybe the additional bitterness/tannin/acidity from the choice of apples didn't help here? Not too familiar with all the varieties listed, but I do know Northern Spy are very, very tart/tannic. 8/4/7/4/15 More recent bottling, at The Cellars tour, 9/19/24. Wow this is much more juicy, round and approachable than the previous batch I had. Still maintains an excellent acidity. Lip-smacking acids and juice on the finish, with the apples very present but not dominant. Score is for this version.

Cask at the brewery pours a murky gold with some cloudy white head. Nose is so damn good, funky wood, buttery chardonnay, herbs, lemon, crab apple. Flavor isn't quite as good, big green and crab apple, lemon, grapefruit. The fruit dominates. Finishes buttery with some funk. Tart. Easy to drink. 9 4 8 5 16
