To make Coolship Pomme, we selected specific batches of our spontaneously fermented Coolship beer—that had fermented in oak barrels for about two years—and added a medley of freshly picked Golden Russet, Ashmead’s Kernel, Northern Spy, and Winesap apples from a local farm. We then aged that mixture for an additional four months. The result: a well-rounded and complex ale with notes of crisp apple, oak, white pepper, apricot, and a hint of funk—all with a wonderfully dry finish.

Bottle shared by Adam, thanks! Pours a clear dull gold with a white head that dissipates quickly and completely. Aroma has a sour green apple and oaky note with some funk underlying. Flavor has a pretty rich apple with a slight tartness and some oak backing.

Bottle from Beer Merchants. It pours clear golden - yellow with a medium fluffy white head. The aroma is fresh, bright, zingy, tangy, crunchy apple, apple skin, leather, nuttiness, funk, lime sherbet, barnyard, damp oak, leafy vibes and some apricot. The taste is crispy, dry, snappy, zingy, tart, puckering, crunchy apple, some earthy tannin, dry oak, leather, apple skin, lime sherbet, lemon juice, some kiwi fruit, some spiky acidity, white wine and damp hay with a drying, woody finish. Medium body and fine, prickly carbonation. Nice depth of flavour. Works well. Interesting and quaffable.

Bottle at Fox River House, 10/10/22. Hazy orangeyellow, thin white head, average retention. Aroma of apple, apple skins, pepper, oak. Taste is tart dry apple, skins, citrus. Bright, high carb. Nice.

Pours unclear blonde, small white head. Scent is very funky, bit plastic, rough apples. Taste is full, nutty acidity. Recognizable allagash palate, medium tart. Milder apple. Decent, but not the biggest fan of this one.

Clear light yellow beer, small creamy white head, unstable, non adhesive. Aroma: soapy, funky, a bit dirty, like an old bar of soap, some breakwater, fruity notes. MF: lively carbon, medium body. Taste: very bitter, earthy, a bit soapy, floral touch, dry, some tannins. Aftertaste: very dry, bitter, soapy, earthy, sour apples, some tannins.

Light golden. Very funky on the nose with some barnyard and light poopy almost. Dry and bitter apples, horse sweat, leathery, hay, green leafy vegetables. Medium sour, quite bitter. Very dry and bitter, a bit too rough but interesting in small quantities.

Bottle. Hazy golden color with white head. Aroma is leather, dusty, apples indeed. Taste is apples, barn, dusty stuff. Oily mouthfeel with natural carbonation. Good one!
