For this Speling, we bottled four different intensities of elderflower macerations. The white chalk on the bottle indicates which one it concerns. The lambik that was used was a 19-month-old 3 Fonteinen brewed lambik. Less than 60 bottles were made per maceration variety.

Pours clear, darker gold . Scent is elderflower, but far more complex. Funky, honey almost ? Not sweet, only the funk though. Not the most EF intense version of the 4. Taste is intense, tart, oaky. EF herbal notes, less floral. Less pronounced as well - bringing the balance more towards lambic, and thus more to my liking.

Bottle. Unclear amber color with white head. So this one apparently has the highest elderflower concentration. Strong jammy elderflower nose, but with a bit green bell peppers in there too, not so much Lambic funk. Taste is super jammy, but again, a touch too much on the spicy side, but still works out pretty well. My favourite is somewhere between II and III here.
