Piè Veloce è il nostro progetto brassicolo dedicato ai lieviti della specie Brettanomyces (definiti “selvaggi”) e si declina in due birre, entrambe della tipologia Brett Ale: questa, per cui abbiamo scelto il ceppo Bruxellensis, e sua sorella in cui utilizziamo il Lambicus.

Il mosto della Piè Veloce Brux è realizzato con un’importante percentuale di cereali succedanei (frumento e segale) e mediante una luppolatura oculata di stampo americano, sia in amaro che in aroma. La fermentazione – effettuata fin dalla primaria con brettanomices Bruxellensis – e la maturazione (circa tre mesi) avvengono direttamente in legno: prevalentemente all’interno di grandi botti (3.000 lt) che in passato ospitavano vino. Ne segue un successivo affinamento in bottiglia o in fusto per dare modo al Brett di continuare ad esprimersi.

L’utilizzo dello specifico ceppo di Brett Brux va a compenetrarsi con la luppolatura scelta regalando note fresche di frutta bianca, agrumi e reminiscenze tropicali, assieme ad un delicato tocco acidulo e alle intriganti componenti funky tipiche del brettanomyces (riconoscibili fin nella birra giovane, per poi rinvigorirsi con l’affinamento nel tempo).

Bottle. Gusher, almost a 3rd gushed out. Obviously a big white head. Stinky Brett, sugared lemon rind, quite herbal with thyme and sage. Malt base is wheat but also some bread crust light barley. Under medium sour, medium bitter with balanced sweetness inbetween. Over medium bodied with a lot of the carbonation already fizzed out. Quite OK.

Bottle. Blonde, cloudy. Bretty, citric, oaky aroma and Flavor. Dried citrusfruit. Hint of yoghurt. Amazing complexity. Resembles a good lambic. Moderate sourness. Very nice indeed.

I Draught /I Good dense yellow head over hazy yellow-orangey beer. Pure Brett nose, including floormop, barnyard, horseblanket. Sour floormop, some lactic, dried (root-)spices. Dry, but still hints at some restsugars, strange for a Brett beer. Very Brett, which inevitable makes it always a tad lean.

Cheers, Alex! Hazy, blonde. Thin head. Light brett aroma, light lemon and maybe coriander. Soft, fruity, bretty, and a bit of pale malt. It’s not bad, has a light brett accent, and a bit of yeastiness.

Bottle, picked up at the brewery. Hazed, pale gold. Ring of dense, shiny, white head. Nose has sweaty, leathery, pissy, bretty funk. Rotten wood. Morning after white wine dregs. Taste is a little sweet, but mostly it’s tart, dry, and vinous bitter. Light to medium body. Foamy carbonation. A little oily. Lingering, light, funky tart finish. Typically good.

375mL bottle, pours a cloudy golden with a small white head. Aroma brings out lots of wild yeast, followed by oak, rustic saison yeast, and champagne notes. Flavour is along the same lines, with oak, wild yeast, and some rustic saison yeast. Rustic, wild and oaky. Very good.
