A lightly sparkling cider made in the pet nat style with apples organically grown in our orchard. Wild yeasts, ambient temperatures, no fining, filtration or additions. Sulphite free.
This blend contains 23 varieties of apples, all harvested later in the season. As this fruit stores well it is sweated for a minimum of two weeks before pressing. Fermentation occurs over seven months starting in December when temperatures are typically lower enabling a slow fermentation, helping to promote better flavour and aroma.
It is bottled with residual sugar allowing for fermentation to finish in the bottle producing a light sparkle. This also leaves a small amount of sediment in the bottle.

14/9/2022. Bottle shared by danlo, cheers Ed! Pours clear gold with minimal head. Aroma of tart apple juice, stewed apple, touch of clove. Light sweetness, moderate sourness. Moderate body, soft carbonation. Dry sharp sour finish. Nicely done.

750ml bottle from Aeble. Golden colour, white foam head that dissipates away and aroma of fruity apple, baked apple. Taste is sweet, tart, fleshy apple, fruity, with some acidity. Medium bodied, light to medium carbonation, dry tart finish. Quite drinkable.
