For the past two years, we've been making a fruited blend with Camerise in small quantities. Also known as haskap or blue honeysuckle, these berries are slightly sweet with a beautiful acidity.
The beer's color is a deep, deep red. It's powerful and very fruit-forward, but still maintains a nice, mellow balance between acidity and astringency.
We didn't have to look very far for a its new name... a blue fruit that makes a blood-red beer: Sang Bleu. Our friend Ammo has outdone himself once again, creating a superb new label to go with its new name.

On tap. Cantillon glassware at rlrl. Opaque purple drank, lingering lace. Vinous with a slight veggie funk. On the softer side. Very veggie, underripe fruit. Really thin. Stemmy, forest floor, sour blackberry, strong acidity bit manage-ably tart. Herbal burps. Left wanting a little more. Okay.

Clear deep ruby red beer, creamy light pink head, unstable, non adhesive. Aroma: quite some diacetyl, fruity, grapes, lots of yoghurt, meh. MF: very lively carbon, medium to light body. Taste: sourish start, lots of yoghurt, pretty bitter, rather unpleasant. Aftertaste: quite some diacetyl, very bitter, yoghurt, dry, bitter finish, some tannins, meh. Definitely waaaay too young, needs a lot more ageing so the diacetyl can get out.

Draft. A red beer with a beige head. The aroma has notes of funk, cranberries, wood, and brettanomyces. The flavor is sour with notes of funk, cranberries, wood, and brettanomyces, leading to a tart finish.

7-4-8-3-15 On tap @ Ma Che Siete Venuti A Fà, Roma. Pours dark cloudy purple, with a creamy red head. Aroma is tart fruity notes of aronia, cherries, slightly funky and yoghurty notes, as well as wooden barrels. Medium to full body, with soft carbonation. Flavour is tart fruity notes of aronia, cherries, sweet funky notes of vanilla and floral brett, as well as tannins and wooden barrels. Not the most balanced brew from Cantillon.
