For the past two years, we've been making a fruited blend with Camerise in small quantities. Also known as haskap or blue honeysuckle, these berries are slightly sweet with a beautiful acidity.
The beer's color is a deep, deep red. It's powerful and very fruit-forward, but still maintains a nice, mellow balance between acidity and astringency.
We didn't have to look very far for a its new name... a blue fruit that makes a blood-red beer: Sang Bleu. Our friend Ammo has outdone himself once again, creating a superb new label to go with its new name.

Maceration of 2-year old lambic with blue honeysuckle.

Bottle, Purvis Beer. Slow creeper at 14C. Very deep clear red with a lasting dense pink head. Rich berry aroma with a feral sharpness in the background. Floral notes emerge later. I'm not familiar with these berries, but they seem to have richness, depth and some acid of their own. Moderately sour, seems drier at the end. A little bark there too. Majestic.
